Healthy Breakfast cake


I struggle to eat healthy during the holiday season. I am torn between celebrating with fatty and sweet foods that stir memories and excess alcohol and staying healthy. For breakfast on the day before a large dinner, I make steel-cut oatmeal or this oat and almond breakfast cake.


Ingredients

1 C Flour

1 C Whole wheat flour

2/3 C Almond meal

1 and 1/2 C rolled oats

3/4 t salt

4 eggs

4 t baking powder

1/2 C light brown sugar

1/2 C honey

1 C nut milk

1/2 C vegetable oil

1/2 Ground flaxseed

3 cups berries fresh or frozen


Instructions


Mix in a big bowl all the dry ingredients except for the rolled oats, then add the wet ingredients. Stir until well blended. Fold in the oats and the berries at the end. Pour in a greased baking dish square 8x8 or round and bake at 375 for 60-65 minutes until golden brown and a toothpick inserted comes out clean. You can glaze with honey or frosting.
